IMPROVED FORMULATION OF GEL THERMOSTABLE FILLERS
We would like to draw the attention of bakery and confectionery technologists to our fruit gel heat-stable fillings with aroma.
We have improved the structure of these fillings: we made it soft, not “rubbery”.
Now they are perfectly heat-stable and can withstand baking temperatures of over 230°C with a holding time of over 20 minutes. After baking, the filling remains soft, and when opened, it acquires a mirror-like appearance.
Thanks to its structure, the filling is very easy to work with. It can be dosed manually and on automatic dosing devices. It can be used both before and after baking.
In response to the wishes of customers who are accustomed to working with the previous consistency of the fruit gel heat-stable fillings with aroma group and use them as a filling in products after baking, we offer a new group: non-heat-stable gel fillings with aroma. These fillings have a dense gel structure, but at the same time, they are well dosed mechanically.
